Red Eco is more of an obsticle thing rather than an offensive thing while Yellow Eco is more offensive than anything else.

how do you dodge the missile when they target you

They're unfortunately impossible to escape. The only way to deflect them is to use a Red Eco weapon when the targeting reticles appear.
