Jack didn't die by freezing to death, he dies of hypothermia which is caused by your body shutting down from sudden extreme temperature change, and since the water in the Atlantic was below freezing temperature at the time, most people died not from drowning, but from hypothermia because they couldn't reach the life boats (which were often only half full) in time. :)
