@32mudbug Lets say your running a blend, 140 proof. The ABV would be 70%. That's 70% alcohol by 30 percent water. But here's what yer missing. THE RECIPE. I can make 140 proof ALL DAY. but if the ingredients aren't there than who gives a shit to know, brother. But the APP RATIO IS: 140pr/2=70%abv,

Basically: x(p)/2=abv (that x time proof, divided by 2 equals your abv)..... Just make what tastes good and gets you drunk man. Don't get to high on the bottle. Respect those around you, hero.

@winston393 Tempering. That's how you know what you're putting in. If you taste it and it's a little weak, you add a middle- end jar. If you accidentally add too much water you add a higher number to further the proof. Always best to start with your second and third jars and then start the tempering. Best to bring it down to about 45% ABV.

@winston393 ...... seriously, google is a great place to start. But if your proof is too high, you add water. These guys weren't rocket scientists. Just distill mash into the purest alcohol you can after one run. Once that's done, you have a choice, distill it again or drown it down and bottle it! It ain't hard. Just add sugar and yeast with water.(superyeast works the best) All you have to remember. After your first run, you will know what you want to truly do.

He's tempering or cutting the final product with water. You do that to lower the proof or to get a certain taste or even stretch out the quantity of liquor. You have three levels out of each batch; heads, hearts and tails. Head is what comes first and is mostly methanol which will have impurities as well as some condensation in it and is usually disposed of, hearts are pure ethanol and tails come at the end of the batch which most people save and add to the pot for the next run

Nor do you want to drink the end of the run, it contains heavier alcohol and is funky, but not in a good way. The trick is, you do want to capture a little of each, to give character to the middle of the run. You could age in wood and let the wood do all the work you will LOSE volume but gain A LOT of taste
