a small tip for making dosa, i just mix rice flour and urad flour 3:1 ratio along with a lil yeast and warm water since i didnt bring a mixie or grinder.
this mthd also works for appam with lil coconut milk but incase of panniyaram, i dint like it much.

No, I'm not from Coimbatore. Although my accent has its roots in the 'Kongu belt', kosuru is a word that is quite commonly used in Madras and the media. Mine is a concoction of Kongu and Dindigul Tamil with some refinement over both regions in pronouncing certain sounds (la, La, zha etc).
Yeah, they are all the same. But for paniyaram you can experiment with extra garnishing. All 3 dishes have different varieties which follow slightly different mixes (cilantro idli, sweet paniyaram etc.). But the basic batter is the same.
Yeah, you can make paniyaram from regular dosa batter. For paniyaram it should be little more coarse, but it's alright. It doesn't make a huge difference. Thanks :).

That's the difference between a blender (mixie) and a wet-grinder (with stones etc). You're right, in a traditional wet-grinder you grint it for 30 minutes or more. But it's fast in blenders. The result is more or less the same (you can see it in my dosas :p).

The rice used is 'ponni' and the other ingredient is 'urad daal' (ulutham paruppu)
This is the ratio: 4 cups rice 1 cup urad daal
If you can't get 'idli rice' or 'ponni rice', you can try with regular basmati rice. But dosa will be a little to brittle (but you can alter the thickness accordingly).
