YOU DONT LEAVE out enought water ... you have to do it for 4-5 seconds... see Seattle coffee gear and the experts for this beautiful giotto premium plus
they make lot of videos on youtube...
so dont call it the perfect shot, you forget the temperature... but nice extraction and crema lol
Well it´s really not up to the brew head itself. Rather the underlying mechanism. This is a heat exchanger machine I think and yes, you need to flush it before you brew to get the temperature down a bit.
NO, not trying to cool the brew head down just ensuring full water flow from the beginning of the shot. Also expelling that little bit of water that sits in the brew head which is a little too hot.

Looks good !
is that little bit of water that you let out before you attach the portafilter enough to cool the brewhead down ?

I was under the impression that E61 group heads didn't need to be flushed. Am I wrong in thinking this?

So like I said then. You need to do a short cooling flush to get rid of that superheated water to get into the right temperature.

@conseva Generally, you're supposed to let out the water, so that the coffee isn't burned when it comes through the brew head.
