looks like he spun the wing at 0:26, then tried to stop the turn with an input to the other side, which full stalled the glider. Note the collapse when the spin first happens

Yes of course. With proper training, equipment and the necessary exception (since you are taking up a passenger and are responsible for him) it is not a problem @ all.

How does a person who is interested in this sport, know what size of paramotor and parasail to purchase? There are many companies out there selling these and I have no idea what kind and what size to get?

Go to USPPA.org and look up one in your area.

If you are going to use a large wing then at least have it weighted down using a water bag etc. However, better to just buy one that is for your own weight.
