Another thing i like to do, is after boiling the potato's is pop them in a sandwich bag with oil, a little salt/pepper and any herbs or seasoning, then shake them about. it breaks up the edges, coats them in oil and seasoning, and then just pop them in - :D

i like to boil my potatoes in some broth, beef or chicken..and instead of using olive oil..I use butter..

That`s the method i use as well only i boil mine for 8 mins and add a couple of crushed stock cubes to the oil to give the spuds extra flavour

Parsnips and potatoes. I have always found it difficault to find parsnips in Spain though.
Also add to the oil some Sage or rosemary for flavouring.
