@quick123ish well you can you check under the incentives of the app but usually u get paid the app and free updates for beta testing it u usually get the full launch

Ad-hoc is a Latin phrase which means "for this [purpose]", and it is just A WAY of installing iPhone applications onto a device for the purpose of beta testing them. The other way of installing iPhone apps is through the iTunes App Store - which is the usual way for purchasing already published apps. Ad-hoc does not refer to anything other than the purpose of installing these apps. On the other hand, ad-hoc WiFi network is when you connect from a computer to computer directly :)

Say someone puts an app up for beta which is iPhone 4.0 OS only, or even if its not, will I get 4.0 beta because they have my UDID?!

Friendly device is how you want to name your device (like My iPhone or something), and device UDID is unique identifier you must enter.
Right above that section is a link to "Where's My UDID" which you should follow in order to find out what the UDID is and how to get one.
Read through the site - everything you need is mostly explained right there. Also there's a forum :)
The Frequently Asked Questions link at the very top of the page (FAQs), has all kinds of questions and answers.
