Rene Redzepi must be a really interesting Chef to meet .. and he seems to carry some of the learnings from the places where he worked (French Laundry - Thomas Keller), etc... that care about the ingredient and bring it on its best to show what u have @ ur region.. what impresses me a loot as a Brazilian is when he mentioned Amazonas forest... hope that him and others many Chefs come down here and look what a fabulous Nature that we have.
