Hey I know it's ages since you asked but he doesn't use cream for the mushrooms, he simply adds single cream to the mix after the Worcester sauce and dijon mustard are added and cooked in for a minute, when the cream is added the sauce will be very watery so you need to have the heat up high and allow it all to thicken up into a sauce for about another minute.

I was a bit reluctant at first to cut away the fat of the entrecôte (because that gives the meat it's great taste), but with the addition of cream it just turned out right.
