  • True Wok Hee, wish I could get that out of my 18,000 BTU! Going to get a 65,000 BTU for outdoor use but the burner this particular woman is using is probably a foot pedal operated 150,000+ BTU. Food tastes absolutely fantastic out of these high burners using original carbon steel hand made woks, just cannot beat them when seasoned over many years.

    Thanks for a very good upload, would love to see more of these on YT.

  • Alot is cooked very fast on very high heat. It's the best way to eat. It's quick, simple, delicious, and fun to do too. I do alot of cooking in many different ways and this is by far the most fun and my personal favorite.

  • The Chinese way of "wokking" or stir-frying technique make some of the ingredients kinda crunchy on the outside but nice hot juicy and tender on the inside. It breaks down all fibers in meats, kills germs, and really get the ingredients to absorb all the spices and sauces. The real Chinese chefs can make ANY dish out of a wok. I'm not exaggerating or praising, but stating actual facts.

  • my new high powered stove does this. I tried pan fried salmon in olive oil and added some rice wine in a cast iron skillet and the flames completly burned away all the oil and excess fat and the fish was perfect and the pan was bone dry. Flame cooking actually seem to burn excess fat away

The fire comes from the fact that the wok is so hot the oil vaporizes and then catches on fire, it's a common sight in Chinese kitchens and stands like this is a lot of Asian countries. I find it reassuring, at least if you get something at these places you know there's no bacteria or anything else alive in it.
