  • @TheExtremeOriginal It is IMPOSSIBLE to grate "fresh" mozzarella! It is too soft and milky inside. You can crumble it up or rip it apart. After looking at what this guy is using, I can tell he is using shitty mozzarella. He is no PIZZAIOLO!!!

  • @saintsaji -we use it but do not peel, cut into strips. In my house we use provola sliced​and then chopped. The important thing is the dough, and the hot wood oven .

  • @saintsaji Uh, I live in Naples and go to the local pizzeria almost every day, and I can confirm that there is grated mozzarella in some Pizzas.

  • @BackdoorBox How can you grate "Fresh Mozzarella"? It is too soft which would make it impossible to do so! Right? It would make more sense if they used a knife to cut it into small pieces or to just crumble it up with your hands. Your local pizzeria must not be serving you real fresh mozzarella if they are grating it. It shouldn't have a yellowish color to it, like the mozzarealla used in this video, it should be more of a milky white color.

  • @saintsaji which is why they harden it first. There's not just "soft" mozzarella, there's many different shapes, sizes and densities of mozzarella. I am inclined to agree though that the pizza in the video is not Italian.

  • @BackdoorBox I am well aware there are different shapes and densities of mozzarella. Once constancy though is that mozzarella is never yellow, unless is no longer fresh. Some pizzerias use "pasta filata per pizza" which is cheaper and you can actually grate, and is not at all what they would serve you on your table, if you order some "caprese" or just mozzarella as standalone appetizer. Pizza napoletana d.o.c. should have mozzarella di bufala, not shitty yellow hard cheese like in this video.

  • hi, thanks to ur recipe i get my dough very good but i have a problem.... when i try and bake my pizza it just gets too hard (unchewable)... even if i dont roll it too thin, the pizza either turns out to be too hard or not cooked at all... please help me... im sure i am getting some basics wrong... btw, i use a home oven...

    You might be adding too much flour also.

  • Hi, nothing apart from flour, water, salt and yeast. and the flour was kneaded exactly as shown here. i think the problem was with the microwave i used. it didnt have proper heat may be.

    I couldn't really tell...

    I'm trying to help you here.

    If you don't have a pizza stone (like me), then you can use a quarry tile ($.99 @ tile/hardware store). They work the best I've researched.

    If not, you can even use a large cast iron pan with a flat surface as one, just leave it in oven as preheating.

    Or use a pizza pan like me and just crank your oven to highest possible and place pizza on lowest level.
