absolute closest to correct way to open an oyster i've seen on youtube...."lolli-pop method" is spot on... no need to flip if you scale the top off right...just one more step in raising it closer to eye level enough to peek inside (maybe sacrifice a millimeter of liquor if working fast). Smoothly peel down the upper mantle you'll see attached on the left upper shell.......shave away the adductor...the bottton adductor...and done.

eating raw oyster is definitely an acquired tasted, much like each sashimi (raw fish). The first time I ate a raw oyster or a piece of raw fish I spitted it out, almost vomited. By the 5th time I begin to appreciate the taste. Thereafter I became a sushi and raw oyster lover, drooling over the bi-halves just thinking of it. I like the oyster with lemon juice, a must.

Well if you only need a butter knife then just use a knife not too sharp.
Also the best way to control correctly a knife is to have it sharp. THat way you don't have to apply a lot of strenght. This mean that you need very thick glove that limite your motricity and give you a better chance to having tje knife slip.
It's all a big circle with no perfect answer. Personally I think it's better to work with bare hand so you get a good control and can di more complex cuts.
I had some of these oysters at a restaurant in Maine yesterday. They were Large and very delicious. Now that I know how to properly open them myself, I will be sure to swing by Duxbury to pick up a couple pounds.

Throw out the first water when you open it, so the oyster will make more that will be cleaner and better tasting.

Fairly irresponsible not to recommend a glove or cloth or some sort of protection for the hand in case the knife slips.
