lol that indian chef is tough. In china, dim sum chefs also have to take their dishes off of steaming pots or cookers. My friend told me he worked with a chef from china who could just put his hands inside boiling water without twitching.
@JamesKendric You get used to it, but boiling water will ruin your skin forever. Always burnt and scarred. I worked a woodburning oven that reached 350Celsius, and after about a year you can stick your arm half in to check the temp or move your lasagna around in there while others get near and break a sweat.
This is a great example of why Gordon is such a fantastic chef. He's freely admits when he doesn't know how to do something and is very eager to learn. Humility + Enthusiasm = World-Class Chef.
