  • Excellent lesson. I love freshly grated parm on seafood pasta. Even my 87 year old mother (born and raised in Naples) has decided that it is great! Why so many rules?

    Salt, Pepper, maybe powdered Chicken stock? and some herbs?

  • Any Italian will tell you that you should NEVER put parmesan cheese on seafood.

    yes I agree, but sometimes we use pecorino cheese on mussels gratin with breadcrumbs.
