You need fresh vegetables for salads, you can't keep vegetables for months in a freezer as you can with meat. Thus you need a constant supply of fresh vegetables to your restaurant and that isn't cheap.

By making hamburgers and the like (junkfood) cheaper and stress that whatever percent of people in the world are obese, then raise the prices on the 'healthy food'.
