I'm still trying to get the unlockable content. I know 1 of the unlockable things is a character because i looked into the character data files and found 1 more data file than there is characters on the select screen. I also found 3 extra stage files. I've done around maybe...15 brawls so far and beat the Target Smash game with all characters, and nothing's come up yet. Well back to trying!

You DO realize these demos essentially function as a game already? They're adding on all these graphical modifications to make it even better than the game it's based off of. And every time they make a new release I'm assuming there are bugfixes and other tedious things to do, so I'd prefer long updates with more changes and than having to wait longer for the final product.

The demos are there to give people something to do while they wait for 1.0 and to show off the progress the devs and balancers are making.

Furthermore, Luigi was directly confirmed unlike Zero who was confirmed through an error on developer ElvisDitto's part, similarly to how Lucario, Ness, and Jigglypuff were unintentionally confirmed to appear in Smash Bros. Brawl.
