Most of the low/non-fat dairy contains weird thickeners, like cellulose gum, that are really unnatural and, in my opinion, unhealthy. I think Greek yogurt is naturally low-fat, but I can't help but feel like it would be better to use full-fat dairy. All of your recipes use really fresh ingredients, so I'm curious about your stance on this. Thanks!

As a girl that as slowly transitioned from the "diet-low-fat-franken-food" era to eating real whole fresh foods, this is a question I often go back and forth with. Ultimately I think I will move away from low fat dairy b/c of all the additives but like everything else it will probably be a slow transition of trial and error. I've already began experimenting in this arena but you make some great points!!
@Vivalarachie Whole products are better. reduced fat milk is not even milk after the processing. Soy milk actually has white paint in it - put a pound of soy beans in your food processor and see what color you get...that's not white. Better to use whole dairy products or almond based products are even much healthier. Use coconut oil, rice bran oil or clarified butter instead of olive oil - olive oil goes toxic after it's low smoke point. use a bamboo steamer when you can and remember salt kills
