Great movie, but this final knife fight is not very good. What is the villian doing? He could have easily killed the protagonist when his back was to him, but he instead chooses to shove him away. By the way, a lot of people claim that this movie features European knive fighting. No so, it's Filipino.
European knife systems are drawn from the fencing systems of sabre and rapier. The standard angles of attack and thrust for the proper European and Filipino short blade systems are practically identical, where you see the difference is in the footwork and disarms, which aren't adequately addressed in order to determine what "system" Hermes is drawing from.
The Boss was, simply, arrogant. He should have gone for the neck, instead he sought initially to humiliate, and so he's dead.

It killed him indeed, I agree! Have you noticed the grin of hatred in the bad guy's face, before the attack? Marvelous! This is the work of a consummated actor.

I got the DVD. The rest of the movie is great. Well worth the purchase.
I don't know which fighting style this is, but the training methods is pretty universal and a good place to start.
