  • Bobby Flay did a show with a coffee rubbed chipotle ribeye - I added the cacao nibs while thinking about crossing that with sort of dry version of a Mexican mole sauce.

    Well, the cacao (chocolate) and coffee beans seem to say Valentine's Day to me. I wonder if I could do a pot roast with that rub mixture.

  • Cocoa powder might work, but the main difference is that it will have sugar added, which means you have to watch it real careful on the grill or the sugars will burn.

    Try it with the powder and let me know how it came out!

  • I tried this last week. I could not find the Mexican spice in the limited time I had, but all in all, it was probably the best home cooked steak I've had in a long time.

  • They just make a nice aroma, doesn't do too much for the flavor unless you put a lot of 'em on. But it's just fun to do ;^)

  • I'm a big fan of mole chicken & pork, and I've had a coffee-marinated brisket before, but this "Mexican mocha" steak is a new one on me. Look forward to trying it, as it's a vehicle for caffeine I haven't tried yet, plus, MEAT. Bonus!

  • The bonus of caffeine on meat, is that the caffeine is a natural tenderizer. But I think the amount of meat you'd need to eat to really get a buzz out of the coffee probably isn't healthy ;^)

  • I've known about the chocolate meat thing but never tried it. The recipes I've seen in books is to do with Mexican cooking, where they actually make a chocolate sauce then pour it over whole chicken fillets/portions.

    BTW, I like that you use "our" mustard, me being an Englander!!

  • Right, most of the chocolate-meat recipes are Mexican or South American, but I just heard of a chocolate rabbit recipe from Sicily - but I'm not quite sure I'm ready for that... and I love all mustards.

  • The bean itself is actually cacao. Cocoa is the processed powdered version.

    I shot this on a Canon digital still camera that has only limited video capacity.

    Now I've got a Panasonic 320 video camera that's much better.

  • xDeC35x: there are a lot of cooks all over the world who add dark chocolate sauce to a steak. so the idea of using those "unusual" ingredients isn't exactly new. i can't tell from the far but it looks like it tastes good.

  • the dry spices/ingredients are able to synergize evenly and create more consistency of flavor in the meat than using fresh ingredients. plus, its just faster :P i think a lot of chefs on tv are just accustomed to dry ingredients from their cooking-in-restaurant days, could be the reason why you almost exclusively see dry-rubs on cooking shows

  • I like dry rubs for the grill, but use more saucy stuff (and fresh herbs/spice) in the oven. Too much wet or sugars over a flame can just burn and leave a nasty crust on your meat, where they keep meat juicy when oven cooked. I guess it's just a matter of taste and experience. But good points about consistency, etc.

    I can't imagine cacao and coffee being good on steak, but I'm one of those people who'd try it before turning it down (unless it smells bad lol)

    Too bad I don't have enough influence on my mum's cooking to get her to try this. =/ I'll have to wait 'till I move out and that'll be a while. Until then I'll keep an eye on other strange-looking recipes to fall in love with ;D
