Yusuke has the smallest percent of demon blood in his body. The first time he died, he was too weak for that demon blood to become dominant, he wasn't ready.

The second time he died, now, his body was strong enough to handle the demon blood emerging and becoming dominant.

So that's what happened. Once he died, his demon blood brought him back to life and he came part demon. His father found out about it, and took over his body to fight Sensui since Yusuke still wasn't strong enough to beat him.
