I didn't write the recipe but the boiling water works, whatever it does, to give a beautiful texture and 'crumb' to the cake. You'll think the batter is too runny but it will turn out great! Making it today actually for my daughter's birthday!

@joshie588 cocoa is dry and unsweetened. melted chips aren't really the same...i would just make this particular recipe with the cooca...if you don't want to buy a whole canister of it you can just get what you need at a bulk store.
@thesunshinegirl1999 It's called tempering. You add a little of the water to the eggs and stir almost vigorously to avoid scrambling. Once it's heated up, you add the rest, and they wont scramble.

@a1angiem Thanks, I did a google and theres a conversion for cups to grammes, i never expected sugar/flour etc to be different but they are in weight per volume, I almost got caught out. going to be trying this one now I have it in metric measures

@jennyhmongthao Yes, you need to grease the pan well. You can use cooking spray or butter on a paper towel...then sprinkle with a tablespoon of flour, shake it around to coat and then dump out the excess. After baking, let it sit in the pan for 10 minutes before removing to a wire rack to cool. Hope that helps!

Made this cake for my daughter's 20th birthday yesterday. Very fudgy and very good. We all enjoyed it. I also made the 7 minute frosting, but it didn't get as fluffy as yours and I think I know why. When I separated the eggs, a little bit of the yolk got into it and that might be the reason it didn't fluff up quite as much. Next time I will be more careful. But who really cares because the cake and frosting were absolutely delicious.
You are exactly right: any contamination of egg whites with any kind of fat, including the yolk, will hinder their volume while beating. That is why you need scrupulously clean bowls and beaters. That cake would be nice with the 7-min. topping! Yum, yum! Happy Birthday, DD!

Gee, they never tell you that, do they? The recipe says "cool completely on rack"...and I've never timed it...but I would guess about an hour should do it...I just keep walking by and laying my hand on the top of the cake really gently to see if it's warm. Yes, sift the dry ingredients together...but you should cream the sugar and fat first (it helps dissolve the sugar crystals)...
