Turns out that the dude playing Luca Brasi actually flubbed his lines in this scene because he was awed/intimidated by Brando, but Coppola decided to keep the scene. Later they added the scene where Brasi is practicing his lines at the wedding.
I'd say they are good men, honorable men, but they are bad people.
