They got 7000 satallites in the sky, why can't we see something of the launch from above.

Because when you're launching anything it's generally a good idea not to have anything else in the airspace.

I want to see this launch in color. The infrared images are great but I would love to see this in living color.

Yeah, alas this is all they made available :( I agree though, the production of live launches from these companies tends to be sub-par. I really wish they would all step it up. Not just color but HD too!
