Superb videos!!! The information at the start of the part 1 about the ingredients is extremely helpful, particularly when diagnosing why my cooking doesn't taste like the stuff in BKK. Please, please, keep including this info in future videos!
Thanks to your videos I'm learning stuff. Actually i'm not a fan of minced meat, so i tend to wok toss marinated pieces of chicken thighs instead. I had 5 different versions of this dish at local thai places and they all came out slightly different. However, I'm gonna practice more on my outdoor wokburner:).

I really appreciate you're hard work and effort and hope you continue to make videos. I don't eat chicken and I was curious if you thought tofu would work as a substitute? Any thoughts?
@JesseSaintJesse You can use tofu, the hard pressed kind like the one used in Pad Thai, or the fried kind, just so they stand up to woking without falling apart. Thanks for following the show :)
