This scene is simply to show the brutality of the Klingons. In fact, up to this point the Klingons haven't really done anything particularly impressive. A cargo ship and a science vessel are destroyed. Not very impressive. Interestingly enough the original concept (with this being a Romulan ship) had the Romulans uncloaking amidst a group of Klingon ships and blowing them away. I've always wondered how the Romulan version of events would have played. Even though I like the Klingons more.
@DukeNukemTheSeries I think this is actually to show what kind of man Kruge is. He isn't really evil. He wanted prisoners and avoid pointless deaths. Klingons don't attack unarmed fighters. It is dishonorable to them.

I believe she was Starfleet's answer to fitting the bulk of the science capabilities of a larger starship (like the Constitution-class) into a much, much smaller, more economical (and above all cheaper-to-build) hull. That meant the bulk of what made the Constitution such a well-rounded design had to go, in order to save space.
Kruge should've had direct control of the weapons like Klaa did in Star Trek V. Then if he had messed up, he would've shot himself. Better give it someone else.

@GrandFunker What was he supposed to do? He was there to monitor and take readings on the Genesis planet, not discover the once dead and now alive again Spock. The fact he was alive again was unprecedented and by all conventional thinking impossible. And following the regulations is expected and the fact the Kirk doesn't is why he gets demoted. Further more, the Grissom could have been sunk by a one-eyed chimp in a shuttle craft with a hand grenade.
@FekLeyrTarg the oberth class as far as i know only has 1 phaser array and minimal shielding and no photon torpedo launchers o.o how can she be as strong as a bird of prey?
As I said, that's in Interplay's game Star Trek: Klingon Academy. In that game, her armor is stronger and she has 2 Phasers and 1 Torpedo launcher. Besides, that game takes place on or about 2291, about 6 years after ST3 und about 2 years and a half before ST6.
SFX and music are mixed in the studio on a single track. Dialogue is kept on a separate track for dubbing. That's why it's possible to remove dialogue from a stereo movie, even with a karaoke machine.

Science Vessels take the greatest risks out in space. They are not particularly designed for combat.
