@lovelyladylibra89 I think this batter could be divided into two equal parts and baked in two 8-inch round pans for a nice layered pound cake. Just choose a nice icing, or Cool Whip, or strawberries or something between and on top of the cake. YUM! (It will probably take less cooking time.)

I really like Betty and her recipes on here. I like the fact that these are traditional recipes instead of fancy recipes with hard-to-find ingredients. I know for sure that more people would be healthier if they took the time to go back to the basics and cook real food from scratch. Too many people are heavily reliant on industrialized processed foods and that's the reason for obesity. I used full fat dairy and real butter just like people in the olden days did.

@KissHope I think this cake will require more space that a loaf pan, but you could fill to the appropriate poing and pour the rest in another small pan or baking dish and you would come out with one loaf of pound cake.

Hi your cake looks mighty tasty but i noticed you baked it on the bottom rack!!! Now whenever i do that it burns whatever i'm cooking is something different that u do to prevent that?? or is it ok to bake like that with that type of oven?? And do i have to worry about people walking to heavy and making the cake drop
@shonshyne I would rather not use the bottom shelf for baking, but my cake pan was tall enough that I felt I needed to put the pan on the bottom shelf. I worry about that, too, but I never have had any ill effects with this particular oven. I don't do anything special to prevent burning--but all ovens are different. Also, I never have trouble with cake falling from kids bouncing around in the kitchen. I think my oven is pretty stable.
I made this for dessert for our Christmas lunch, it turned out pretty good. I made some green sugar glaze for the cake.....I added green food coloring, lemon extract and lemon juice to give it a lemony taste. It was awesome!

I just bake this cake just now. I think I did it wrong. The cake didnt come out as smooth as yours. Would it be because I mixed the flour with spatula instead of electric mixer?
However, the taste was great. I didnt use lemon juice though, I use lemon zest only. And I put some roasted almond inside the dough (I used my mini food processor to crush the almond into powder).
I want to ask you more question. Would it be nice to serve this with strawberry sauce?
@erinp1392 Yes, it may be because you didn't use an electric mixer that it was not as smooth. I like your addition of lemon zest and processed almonds. And yes, this would be wonderful with strawberry sauce!

@azngirl967 I haven't had a problem with them, but I do keep a lot of dry ingredients in large glass containers with screw-tops. I keep the bags of flour, sugar, etc., just show the ingredients in my videos. I haven't run into trouble yet with bugs, but I think our grocery store has very few pests that might be brought home in the groceries.

@gracedesigns Yes, you can just take 1/2 of each ingredient, and the cake will be very nice. Bake for an appropriate amount of time, depending on the type of pan you use.

Blue Bell ice cream has a blueberry variety called Delta Blues..it does have bits of pastry in it, tho, to simulate blueberry cobbler..most supermarkets carry Blue Bell ice cream which their Homemade Vanilla is to die for tasting like fresh churned..Im hooked on that variety, lol. I had sort of figured out what ingredients to use, but I adjusted the amounts as I made the sandwiches. But, for a major recipe like this (pound cake), it is something that I have definitely made before. I started creating and collecting recipes when I was about 12, so I have about 50 years of cooking that I refer to, including family recipes, too.

This cake is so rich, I think I will enjoy it with a scoop of Vanilla ice cream like Haagen Daz, and a hot, black cup of coffee. Then I think I will take small bites and try to taste the butter and lemon in each little bite !

Hey betty, you cakes looks delicious. i tried your recipe today, however , my cake sank once i took it out of the oven. Also it was a bit undercooked in the middle, although the top and bottom were fine. What do u think couldve went wrong ? i really want to bake this perfectly, as my boyfriend loves cakes !!

I just bake this cake just now. I think I did it wrong. The cake didnt come out as smooth as yours. Would it be because I mixed the flour with spatula instead of electric mixer?
However, the taste was great. I didnt use lemon juice though, I use lemon zest only. And I put some roasted almond inside the dough (I used my mini food processor to crush the almond into powder).
I want to ask you more question. Would it be nice to serve this with strawberry sauce?

@erinp1392 Yes, it may be because you didn't use an electric mixer that it was not as smooth. I like your addition of lemon zest and processed almonds. And yes, this would be wonderful with strawberry sauce!

How do you keep the flours bugs out of your flour?

@azngirl967 I haven't had a problem with them, but I do keep a lot of dry ingredients in large glass containers with screw-tops. I keep the bags of flour, sugar, etc., just show the ingredients in my videos. I haven't run into trouble yet with bugs, but I think our grocery store has very few pests that might be brought home in the groceries.

@gracedesigns Yes, you can just take 1/2 of each ingredient, and the cake will be very nice. Bake for an appropriate amount of time, depending on the type of pan you use.

@fairlightdawn112 Thanks for the compliment. No, I did not use baking powder. This is a pound cake, and it is not supposed to be light and airy. It is dense and has a wonderful texture.

Very pretty display, Betty! Blue Bell ice cream has a blueberry variety called Delta Blues..it does have bits of pastry in it, tho, to simulate blueberry cobbler..most supermarkets carry Blue Bell ice cream which their Homemade Vanilla is to die for tasting like fresh churned..Im hooked on that variety, lol. I never realized how rich pound cake is..lots of eggs, butter, and sugar..wow am thinking that big slice u had there could really stop up an artery, haha. but whatta way to go! ;)~

How do you determine the measurement of your recipes?
Have you tried them before you uploaded?
I mean...it's hard to measure how much of each ingredient you need..

@rockubabe There will occasionally be a few recipes that I have never done before, like the two sandwicheswe had for lunch at Jonathan's. I had sort of figured out what ingredients to use, but I adjusted the amounts as I made the sandwiches. But, for a major recipe like this (pound cake), it is something that I have definitely made before. I started creating and collecting recipes when I was about 12, so I have about 50 years of cooking that I refer to, including family recipes, too.
