Actually, it's better if you lightly cook the kimchi and pork (or other meat) separately with some sesame oil for a sharper flavor and lightly cook the pork for softer meat. (Make sure to cook the kimchi first... then cook the pork... in a separate pan with sesame oil.
That pork would be too chewy the way you're making it now.
You should also add some ground garlic, and anchovy powder. I also add a table spoon of sugar to also help bring out the flavor.
cool input. I don't think i've seen any korean person actually cook it like that. All koreans mostly just toss it in like i do. Its not chewy at the end, Its soft.
I can understand adding the garlic, but hate anchovy =P The sugar deal is 50/50. Some people usually add it in and some don't.
I personally don't add sugar, but def stir fry that kimchi first, add some pressed garlic and also add a pinch dashida and throw sliced serrano and 1 spoon of Red pepper powder! I made mine with tuna yesterday. Yumm!
Dude, I got hungry watchin' this vid! Y'all shouldn't be wavin' that stuff in front of the camera like that; we might all end up at your place for some 김치 지개
(Yeah, I know some of y'all spell it '찌개'; so what do ya want - a medal? I didn't invent the language after all.
Rock n roll, Dennio. Let's see some more like this vid, bro!
Lol, cool comment and all, but what's with the "(Yeah, I know some of y'all spell it '찌개'; so what do ya want - a medal? I didn't invent the language after all." ?

Hehe.. give it a try and let me know what you think. But definitely the sugar part, it's gives that extra kick to the flavor.
Optionally, u can also use "dashida" powder instead of the anchovy powder.

Have you ever made it with tuna? That's how the restaurants in Chuncheon usually made it.
Tamar1973 3 years ago
Tuna? Like tunafish or like the tuna in the little can?
Aspiret620 3 years ago
In Korean grocery stores you can find tuna in a can specially made for kimchi chigae.
