  • Actually, it's better if you lightly cook the kimchi and pork (or other meat) separately with some sesame oil for a sharper flavor and lightly cook the pork for softer meat. (Make sure to cook the kimchi first... then cook the pork... in a separate pan with sesame oil.

    That pork would be too chewy the way you're making it now.

    You should also add some ground garlic, and anchovy powder. I also add a table spoon of sugar to also help bring out the flavor.

  • cool input. I don't think i've seen any korean person actually cook it like that. All koreans mostly just toss it in like i do. Its not chewy at the end, Its soft.

    I can understand adding the garlic, but hate anchovy =P The sugar deal is 50/50. Some people usually add it in and some don't.

  • Hehe.. give it a try and let me know what you think. But definitely the sugar part, it's gives that extra kick to the flavor.

    Optionally, u can also use "dashida" powder instead of the anchovy powder.

    I personally don't add sugar, but def stir fry that kimchi first, add some pressed garlic and also add a pinch dashida and throw sliced serrano and 1 spoon of Red pepper powder! I made mine with tuna yesterday. Yumm!

  • Have you ever made it with tuna? That's how the restaurants in Chuncheon usually made it.
