  • Hi Madhura, very simple yet yummy recipe...why dint you add soe tamarind or amchur powder to eggplant? Is there any specific reason? thanx a lots...god bless...:)

    This tastes good just at it. How ever you can add a bit of jaggery to it, as jaggery makes eggplant easy for digestion. Thanks :D

  • @madhura94 This will taste really great. Most of the dishes on this channel are authentic. But go easy on spices and oil ... e.g., the nutrient/calorie ratio of this dish will be pretty low thanks to oil & peanuts. Smoked baingan is a much healthier choice.

    I use Degi Mirch powder for color. Salt is to taste only and curry is not salty at all :D

    Thanks, yes you can add tamarind pulp as well as a small piece of jaggery, as jaggery helps in easy digestion of eggplant...

  • This is the best marathi dish of all time. When I was a kid growing up in India some 40 years ago, we had a marathi maid who made this regularly. Now looking back I wondered why we did not take this recipe from her. Well yours is the recipe I've been looking for that is close to what I remember and its delicious. Thanks so much.

    Thanks, I have used Degi Mirch powder which is also known as Bedagi mirchi powder or Kashmiri red chilli powder, which is less spicy and gives good color to the gravies. You can find it easily at any Indian grocery store. Thanks for asking :D

    Its Degi Mirch powder or Kashmiri Red Chilli powder, its gives nice bright red color to any gravy dish. You will get it easily at any Indian Grocery store. Thanks :)

    Normally I use MDH brand Degi Mirch powder, you will find it easily at any Indian Grocery Store. You are right it brings out really nice color to the gravy. Thanks, have a good day :)

  • yes you can find degi mirch at any Indian Grocery Store... Roasted peanuts needs to be only crushed in a blender... Just give a pulse and mix it from the bottom of the pot to avoid loosing out of oil from peanuts... Don't keep it blending continuously without giving a mix...
