  • Strange thing is that Gordon is no longer the agresive man that he was. He used shout out vile stuff at random and people he work with. I dont mind his precision in his taste though. We need an awesome taster to increase the food quality that is made today.

  • @patchee1000 actually, i'm a sushi apprentice and i learned that salmon must be frozen up to 48 hours (24 for strong freezers). according to my further research, i learned that salmon is actually a very recent sushi ingredient and was uncommon even in japan not too long ago. it was the ainu who discovered the way to cure salmon by freezing them in snow for a few days, which kills the parasites, making it safe to consume.

  • @ForwardIntent so basically, salmon will always be frozen in any sushi bar. it's just a matter of quality of the fish to begin with and the way it's treated that determines the results.

  • @ForwardIntent Sashimi grade fish does not need to be frozen. It is frozen most often to keep it fresh. Considering this place looks to be in NYC, frozen fish isn't needed because of the beautiful fish market.

  • @ForwardIntent I may be wrong here, but I used to work for a company that delivered fish to restaurants and shops here in Norway, and I'm quite sure that some of the Norwegian salmon is qualified as sashimi grade without being frozen. Since I only was a lorry driver I can't be 100 % sure though.

  • when he says frozen he probably means frozen after it has been sliced. Most restaurants get the fish frozen as a whole fish, then thawed, and sliced.

  • What's the big deal with the frozen fish? Fish is frozen on boats in the middle of the ocean! Even the best fish from Japan is shipped frozen. And, most of the sushi in America is creative sushi; not at all authentic. How much crazier is it to put avocado on sushi than cheese!?

  • @ichbinjenny You don't understand the difference between the consistency. Fresh is usually the best, but sometimes it can be exceptional. Since Fish is very easy to spoil, eating it fresh is the best option especially when eating Sashimi, where the fish is raw.

  • @emeraldFloyd Tx for the reply. I completely agree that fresh is best. I live in Asia and often eat fish practically straight off the boat. But, I think it unfair and a bit ignorant for Gordon to expect a restaurant in a shopping center to have never-frozen fish. Tuna auctioned at the Tokyo fish market, some of the most expensive tuna in the world, comes off the boat frozen and then is cut and shipped to places around the world...frozen. All I'm saying is that "fresh" was probably first frozen.

All sashimi you get will be flash frozen to kill parasites, I can almost guarantee it. The reason gordon didn't like the salmon sashimi was most likely because it was atlantic farmed salmon, which is cheap and tastes like mucusy crap.

  • I tasted Sushi Pizza from other Restaurants and they were good. Main difference is they fry the rice so it is crispy and there is no cheese. This one looks soggy and gross. Cheese and Raw Fish don't go together.

    Gordon should know better.

    Also the new menu he devises for this episode is not Japanese, and the teriyaki is make wrong, since it is not breaded.

  • @duydadance even the salmon caught in the ocean gets frozen immediately on the boat, so there is no non-frozen salmon.

    It is not safe to eat raw-derived food, so you must expose it to very high or very low temperatures. Such food could be carrying parasites (anisakis, tape worm), e-coli bacter and so on.

    You pasteurise raw milk, cook meat/poultry/fish. You cook raw eggs to avoid a salmonella infection. The alternative is freezing, but it takes longer and it does not kill bacteria and viruses.

  • @gensuke72 You seem to know a lot more about this than I do, but I think what Ramsay might have meant by "fresh" is whether it was sliced and prepared at the restaurant instead of brought in as it's served, like the packaged sushi you can buy at Kroger or some other supermarket chain. The difference in taste and quality is notable, as I'm sure you know.
