It was Season 1 they were still working out the roles of each character. Think about it, when they first brought the Trill's into being, they were FAR different by the time they became regulars such as Jadzia Dax and Ezri Dax.

@Noromongrel Because this was only the third episode. Any show that goes on for as long as this one did is guaranteed to have inconsistencies between the early episodes and later episodes. Or if you want a better explanation, just assume that he was already affected by the virus and him being nervous and turned on were just the early symptoms.
