The eggs were done cooking when she first put the lid on it. After that, the eggs just got leathery. Cook your filling items before you cook your eggs and set them aside. Then put your beaten eggs in a really hot pan w/ butter, swirl and lift the edges a few times to let the runny egg go under the cooked egg. 20 seconds is all it takes to cook the eggs!
