this is what differentiates iron chef america from the original. there's so much drama, and in this entrance alone, i had goosebumps all over! truly the best show there was!
I really don't think the theme ingredients is fair this time as Homard Lobster is very French, plus Sakai has never lost a seafood battle. and Chen's cooking style is SaiChuan, which is from a region of inland China, Lobster is not a popular ingredients in chinese cooking especially for cooking styles originated from inland region.
But at the same time, Sakai has lost every homard lobster battle. So Sakai will be haunted by the past experience, whereas Chen has no experience. Quite fair I think.
Like kensei1984 said, by the time of this battle, Sakai had lost every other homard lobster battle he fought. (Food Network in the US airs the battles out of order.) Szhechuan cooking does use freshwater shrimp, so it is not that hard to substitute the lobster. I thought Sakai had a much stronger advantage against Morimoto with red peppers. Chen also has worked with more challenging ingredients for him, like foie gras.
I wish they would have used something different too. Homard Lobster has been the ingrediant so many times (as well as japanese lobster and various crabs). I was hoping for something never used before (like Tokyo X). You can see it in Chen's expression that he has no clue what to do.
Did anyone think that Kaga was going to eat the lobster alive, like he does some of the other ingredients? LOL It's very late, but I will watch Iron Chef!

I feel so bad for chen because french cuisine is more geared towards lobster. Even though I love this show- it seemed to be rigged many tmes.

For those who said Sakai has an unfair advantage, I disagree. He lost every lobster battle, which is about 3 or 4.
In that case, it's not like Sakai will dominate the battle, so to that extent, it is a fair fight.
