U can manage clutchless downchanges in any race transmission with dog-clutches. U do need to have pretty good skill because U have to use the throttle to "unload" the engaged gears & then blip it while in neutral to match the engine revs to the lower gear U're going into. U can manhandle them but the dog clutches suffer & it's a little hard on the rest of the trans line too. Today's boxes often incorporate an ignition chopper to cut the ingition for a fraction of a second to aid disengagement.
Probably needs to listen to a V12 Ferrari, '94-'95 vintage. The sweetest sound. But as an American, you're right, there's no comparison to a pushrod V8.

Who needs double clutching?
Just press the clutch, put it out of gear, blip the throttle to match lower gear rpm and change down, release clutch.
We europeans only know double clutching from very old trucks, never heard one had to use it in a road going car or even a race car
