  • @acmulhern Oh see that's the thing... I bought all ingredients today and cooked today. I followed directions to the T.T 4 yolks and 1 egg Beat em senseless. Mixed pecorino. I cooked let the bacon cool for a minute Mixed that in. Then the noodles were done and very hot and used a little of the pasta water to thin. Mixed that in vigorously. I believe I did it accordingly. The eggs have an overwhelming taste.

  • @RyeBai did you check if the eggs were fresh enough? also, eggs can absorb some strong tastes in the fridge, like fish. that might be what went wrong. best thing when using raw eggs like this is to buy them on the day and maybe even try and get the free range ones, less chances of getting food poisoning...

  • are you suppose to taste the raw egg? b/c i just made this recipe and it was awful i could taste the raw egg it looked delicious but when i tasted it i just imagined the pain of eating what i had just made so i just started throwing in some stuff to take the taste away i even put it back on the stove cause i would prefer the taste of scrambled eggs; i added some cream, parsley and green onions and thank god it made it better, still looks creamy. No trying to be negative, it was jut not for me

  • @jessicavm The eggs get slightly cooked by the hot pasta, but the sauce must be definitely creamy

  • @jessicavm I think you probably either let the pasta cool off too long before mixing it with the egg mixture or didn't whisk the eggs up enough. Also are you sure they weren't rotten?

  • @VoidOfIdeas well i had just bought the eggs so i dont think they where rotten but i did forget to check the floating method so idk...maybe i did do something wrong but not doing it again! I'll try it if someone makes it for me :)

  • @jessicavm Here is another way to do it that helps solves the problem. I personally like to cook my bacon (or pancetta) in an extra large skillet. Then I take it off the heat when the bacon is done. Then I add my pasta and egg/cheese mixture in with the bacon in the skillet, and the residual heat from the pan and the pasta helps to cook the egg better. You just have to be sure to stir it very quickly because the extra heat could cause them to scramble. Good luck!

  • @otakixus2 Yes, beef bacon should be salty enough, and similar to pork bacon... If you want to use ground beef, I suggest that you make another recipe, such as spaghetti bolognese youtube.com/watch?v=wwyCUOijLe­E (you can omit pork, of course)!

  • @otakixus2 the whole IDEA behind the carbonara dish is the BACON and egg sauce, its LIKE breakfast but with pasta, so IF u dont like pork or just cant eat it, I suggest U try a different pasta dish, this WILL not work with any other meat. some places use lardon, some use pork belly, and others pancetta, but no ground beef, trust me it will be gross with beef.

  • @Deathofblades Look at this vid in Italian, she's saying pancetta in the original version. But smoky bacon is probably the easiest way to translate it , especially because you can't find the real pancetta in many countries...

  • @WatchingSky I see. Pancetta is readily available in many states but I guess you're right, some countries might not have it. But too be honest with you, carbonara with bacon is incredibly delicious vs a traditional carbonara with pancetta.

    I think this video doesnt't want to "prove" anything here. It's an authentic, original Italian recipe.

  • @AngeliCGuarD Ummm.. Ever eat eggs benedict with Hollandaise sauce? Ever try lemon curds? Basically the way those foods/dishes are made have the same process. Basically you're somewhat tempering the eggs so they won't turn scrambled and make a fabulous creamy sauce.

  • i used to make pasta carbonara with cream for years until i discovered the recipe with egg yolks,the difference is huge..

  • tempistiche sbagliate! mai buttare la pasta prima di aver abbrustolito la pancetta. se volte una salsa cremosa, usate solo il giallo d'uovo e mantecate con il burro.. il formaggio va messo alla fine e non tutto insieme!..

    gli spaghetti sono scotti, e si vedono lontano un kilometro che fan pietà.

    -5 egg yolks 1 white in the sauce not cooked all the way through. May have health risks raw. I try to limit 4 eggs per week. 5 a portion is a lot of cholesterol.

    -Has far more cheese than anyone should consume at once.

    -Last but not least you can see her pour the bacon all over the sauce without emptying the fat. That is A LOT of fat. I would ALWAYS strain the fat off completely unless im in some cooking competition.

  • @whyeff21 For me, carbonara is one of those special once-in-a-while pasta sauces since it is so cholesterol-laden. If you have it once in a while, yes this is how you should do it. And it tastes soooo good. But if I had this every day, I would die quickly. Moderation...

    Guanciale 150 g

    Grated pecorino cheese 100 g

    Spaghetti 350 g

  • I made this tonight. Very good, but I found two tablespoons of oil was too much. I drained much of the oil after cooking the bacon. I think one tablespoon would be plenty. I also added some chopped garlic while frying the bacon.

  • @lash2life Pecorino is the original ingredient because it has a stronger taste than parmesan cheese, but if you can't find or you don't like it, it's fine!

  • @teovenbar That's a rather silly statement, and shows your ignorance. The noodles are hot enough to scramble those eggs if it isn't tossed IMMEDIATELY. It's no different from eating eggs with a runny yolk. There are plenty of other recipes out there with eggs completely raw. Mousse springs right to mind. Besides, an egg infested with bacteria is so blatantly obvious because of the smell that only a complete idiot would become a victim.

    My father is from Italy: he always uses 1 egg per person. He also adds some of the pasta water to the pasta. It never fails.

    for the first time i didnt use cream.. and i must say.. using cream makes pasta carbonara feel a bit too heavy.. .. this way of making it takes half the time of what i used to spend on it.. and it is much easier !! THANK YOU from Denmark :)

  • If you're American, put in cream, why not half and half, and maybe butter too (heck that's probably still not enough taste for you) so if it still doesn't taste good go ahead and add some philladelphia cheese.

    carbonara is a typical food of Lazio (Italian region). the origin of the dish is around the second world war and the meaning of his name isn't cheese..places..or fish..! simply get the name from CARBONARO (man that produce carbon from wood)as you can understand it's an hard job and it's necessary to work very hard for a long time......carbonara sauce it's the pasta dressing that allow you to resist 12 hours or more without stop.

    With regard to the amount of ingredients, you can choose between cooking pasta carbonara for 5 people or dividing the ingredients you have at home and cook less...
