It's all simple physics really. The truck was already partially airborne after going over that hill, its momentum was already in that direction. And when it hit that rock, its programmed to not be able to move and the truck's momentum went into a flip.

You don't have arguments to prove that. It will happen on PC and 360 as well. The problem is the physics engine, not the darn console. Hence why DiRT was very criticised for that reason, among other reasons (focusing on other types of rally racing competitions and not WRC, for example)
