well it's true, out of the odd time signatures 7/8 is one of the more easy ones to play in general - but you can't generalize it, in my opinion. I once saw jojo mayer playing a 21/16 groove and it didn't sound as half as uneven as i first thought it would.
So if you break down a "complex" pattern into easier subdivisions (as you mentioned) it will be sooo much easier to play! and the hardest part will always be jumpin between different time signatures, like in Mathcore.
its just 5 bars of 4/quarter notes (=20/16) + 1 semi-quaver (16th note) (=21/16)
In gamalan/balinese percussion stuff you come across LOTS of DODGY time signatures and that kind of stuff GROOVES if it's written/played properley and with the right feel.
What tempo is it?

to be truthful 7/8 is no-way near as hard to play in a time sig. like 13/8 or 11/8
7/8 has easy subdivisions like 2+2+3 (this song)
and 4+3 or 3+4....
it is hard to define a division such as 2+3+2, or at least hard to define where the down beat is -in my opinion....

I agree. Hard to write an asymmetrical time signature with a groove. It's definately the bassline that that puts it together.
I believe its also that the elctric piano is accented on the first and fifth count with the drums accented on the first, third, and fifth.
