They can see out of the ship using special cameras mounted on the outside and with sensors. The ATT has a hatch the pilot can look out of (The one on top) in case the cameras get destroyed.

I think the Pilot Droid sees out of the ship coz he uses a Sat Nav (i.e. 'At the next space battle turn left')
