I've tried a couple of times to create a piece in waltz tempo- but as of yet I do not have it in me!

A good waltz seems so simple but I imagine the simple beauty is deceptive...

@MellowCypriot One can split the waltz in two components (if one chooses to): 1. rhythm and melody.

The rhythm is (in my opinion) the "easiest" to do- the melody as in all other styles is the difficult part of it. :)
