@AJsAngel2806 The fish is dead, he feels nothing. The nerves keep firing and the twitching and moving are reflex actions. Most backboned animals will do this from fish chickens even humans. During the French Revolution when they beheaded countless amounts of people the human body would still twitch and move. Even more disturbing is that the head would twitch and blink also but they were dead.
@hank1972 If the fish were dead it would be pointless. They like it alive to make it extremely fresh. The heart of the fish keeps running while you are eating eating. I think it's unnecesary cruelty. Just as easy as cutting the head off the fish would be the same and more reasonable.

It is kind hearted of you to assume that people would not be so cruel as to do this, but unfortunately human nature is dark, sometimes sadistic, and tragically what we see here is hideous torture of a wild animal. It is dieing in a truly horrible fashion, to amuse people who have no heart. It is almost certainly conscious of its predicament.

Do you mean the nerves are just reacting? I had bought a fish recently at the asian food market and they killed it right in front of my eyes. Later on (like three hours later) we cut the fish open to prepare it for dinner and it was still twitching! It was so freaky! My friend just laughed at me...
