@renagade12 - I think a tablespoon of lemon juice is usually recommended. And remember I'm pressure canning. Boiling water bath does not work for carrots
Thank you for showing the entire process of dehydrating and canning; a very informative video! Also showing the two jars that didn't seal-- very helpful as I have never canned before. Finally bought a dehydrator and will be doing carrots today!
I've been using the dehydrated carrots and cannot believe how fantastic they are! Used them in some chicken noodle soup where they tasted like the day they were picked! Also in some split pea soup. I used 1 cup of dehydrated in place of 2 cups of fresh carrots in my recipe, but that was likely a bit much. Maybe 2/3 or 3/4 cup for 2 cups would be better.
When you soak vegetables you lose some of the nutrients. The water you use to soak makes good plant food, though. Take care

@HaloHamstur Yes, you will lose some of the nutrients during the drying process but far less than if you had pressure canned the carrots.

I think you can also store carrots in sand in a cool place like a basement.

Yes, I did that last year as you can see on my urban hippy site. But it is a fair bit more finicky and was not ideal for my conditions.

I dehydrated 6 pounds of carrots yielded 1 quart jar full.
