  • Nice, I really enjoyed the video. I will try to make this, my last effort at making jollof rice failed. I am a little hesitant to put raw curry powder. In Jamaica one is taught to always sautee the powder.

  • You should've showed how to back the chicken and sauce you put on it. Did you bake the chicken separately. Other than that, I enjoyed watching the video.

  • Whenever I make jollof rice I can't get the ratio of rice and the stew right. Also can you make a video on how to make moi moi. I made moi moi for the first time and I think I get crayfish happy when I'm making it so the color is a little dark. I dont' know when to stop.

  • i must say your presentation is wonderful i know how to cook jollof rice but never could get it to not be all the way dry and your steaming process was a nice tip. i will use that and definitely let you know how it turns out when i cook it for my mum and brother who are coming to the states from Nigeria who want to eat Nigerian food:)

  • Wow, I want see how you cooked those collard green. It seems like a saute..those greens are hard to make soft. Are yours still crunchy? I am making Jollof rice for thanksgiving but want to make a smaller pot because it will not get eaten. I am considering your recipe because the ingredients will not break my bank! Thank you for posting this video. I am Black American who is wanting to know more about African cuisine. I am reading Ben Okri and he mentions eguis, pepper soup and jollof rice. Yum!

  • @yemonja100 The collard were sautéed and still a little crunchy but if you want a softer texture, try using the frozen variety, thawed and squeezed dry and continue with the saute. I am glad to hear you are considering our recipe, bute any recipe you choose one thing is for sure, you will have a wonderful dish! I enjoy Ben Okri's work as well!   • ummm bell peppers aren't the reason why jollof rice is orange its because of the tomatoes. I'm Ghanaian and yeah red bell peppers aren't even necessary

  • @MrFut23 Thanks for your comment. Tomatoes offer a lighter orange color but the red bell peppers deepens the color. Our Jollof rice recipe calls for the red bell peppers.

  • I'm Ghanaian too my little sister was born in canada and hates spicy foods ...... basically my mom makes the jollof for her with no peppers in it and it looks just like what me and the rest of the family eat. its the tomatoes that give it that colour the peppers is just for flavour @AfroFoodTV

  • @MrFut23 it's actually because of the red bell peppers. they give a deep red color and a slightly sweet taste to the dish.

    p.s: Mum said if you put uncooked rice like you just did, it will burn! (Except parboiled or basmati rice). I guess every family has their own style. *sigh* Oh well.

  • I am a neat freak and your kitchen is neat - but your pots dont do your kitchen justice. And also I am west african too and i have taught a lot of my american friends how to cook this, Its easier when you h ave all your ingredients in a bowl set aside and put it in one at a time - A B C teaching. You mentioned they have to have a right amt of water, well how are they suppose to know the right amount. It would be nice if you teach with measuring cups - everybody loves Jollof Rice
