That whole "caramelize the sugar" thing is an old wives tale. I forget the specifics, but I remember the notion being shot down by a chemist. Something about the temperature or the duration not being sufficient for the process to take place.

Really it's all just for amusement. It serves no other purpose, unless of course you want to make your drink weaker, or set somebody you don't like on fire by daring them to do it.

Actually it changes the flavor of the shot if you have ever done them before then you would know take for instance 151 i have it shot both ways and it has a way better taste lit on fire sort of a butane taste its actually quite good. And as for liquers with high sugar counts it would change the taste even more. I am a chef trust me i cook with liquer everyday i would know.
