What would you suggest using if you don't have the mixed vegetables? That looks good and I can easily make it vegan, thanks!

@kkimberly2004 It only calls for the green peas, onions, and chopped carrots... but since I didn't have that ... I used a can of mixed vegetables.... which was quite tasty......

I think any vegetable of choice is good here though......
