Oh my lord! What a monstrosity. She needs to explain this correctly. First of all, steaming milk for a latte does need to be stretched. I agree with the fact that you should not over stretch your foam, but learn what your drinks are before you pour them. Plus, although this is an instructional video, she should explain that you should be steaming milk as you watch your shots. This chick doesn't see her flaws in this video?
the latte looked great... shes doing it slow because its an instructional video as you can see the shop is closed so why worry about a line of customers? shes off work she dosent have to hurry the most she has to do is clean up a little more wich it looks like shes already done other then what she has just made
@rtrxggg if you think that looks like a great latte, you have been seriously misguided.. the milk is too thin, the ratio is out, the way shes tamping will give her back problems and a seriously sore arm.. especially if shes making 200+ cups a day. Not to mention-because this is an instructional video, it should be done correctly, and it just blatently isn't. I have been a barista for quite a few years; I am not a layman when it comes to coffee, but thank you for your concern

In reply to below, shes grinding on demand, that is there is no ground coffee in the dose chamber when she starts she just keeps clicking to get the freshly ground coffee, most places just keep the chamber full of coffee, but this promotes coffee staleness as once it's ground it starts going stale in a couple of minutes,
since theres very little air in the dose chamber would that allow it more time to not go stail? if you were working a coffee stand and got a bunch of business at once you could fill the dose chamber and be alright, right?
what was she cranking? You should only need to pull once if your grinder is properly set!
And really, pull the shot AFTER you steam the milk. A few seconds is all it takes to ruin a nice espresso! Also, pour the milk and espresso into the cup together as to mix them evenly.
