In another film, Wayne keeps calling a prisoner he is transporting "mon sewer" (a mocking pronounciation of the French "monsieur") after he finds a bill for his fancy clothes from a French tailor. Can't recall the title of that movie.

Here, Stewart's character was a Eastern lawyer. "Pilgrim" in this movie's sense simply means a traveller - an outsider coming to a place with the intention to tame or civilize it. Wayne certainly uses the name "pilgrim" half mockingly - but only half.
