Apparently the reason for the swirled design on the V60 is so that the seam of the filter does not come into contact with the wall of the cone. They want it to be as "free floating" as possible. Maybe it has something to do with what you were saying about how the coffee flush with the cone does not drain and increases the possibility of overextraction.

When the water drips to the bottom of the cone or whatever, it's already got a lot of solubles in it, so it won't dissolve as much additional stuff.
