I didn't realize this was a Russian soup. I also eat it hot or cold but, don't make too much because the carrots go soft after four days and potatos don't freeze well.
This is a really satisfying soup if made right.Think about it, meat, potato and onion with sour cream in a beef stock. Yea, the carrots and greens are bonus. I like it with plenty of sour cream to give it a tang.

This is one of the few without Cayenne. I do put a little horseradish in my bowl.
