Combustion gases exit to the front instead of the back, causing the turbin stages and therefore (because connected) the compressor stages to slow down. The slower compressor rotation matches the reduced air flow velocity and produces more pressure again, speeding up the engine to the point where it starts surging again.

@r1casill in the cockpit there are many indicators of engine performance, thrust, fuel pressure, temperature, fire indicators etc, the pilots are trained to identify which factors pose the most risk and if the engine is still safe to run in the circumstances. Sometimes an engine can still produce usable thrust after a b-strike, but usually it is shutdown, and a 757 can certainly still fly on one engine :)
@r1casill Jet engines usually survive bird strikes rather well and most bird strikes go almost unnoticed to be fair. In this case the bird caused the jet engine to stall during take off and its normal procedure to declare emergency and return back to the airport immediately in the event of engine failure during take off. This video is testament to the professionalism of all involved.

@Byron10301 It's a 757, and I'd suppose that most modern multi-engined aircraft can indeed climb on one engine. I know large liners like this boeing certainly can.
@Byron10301 Twin-engined planes are designed to be able to continue climbing after the loss of one engine during take-off, with situations exactly like this in mind. I think the engine affected by the birdstrike was shut down immediately.
