Maybe the first didn't work because the water needs to be able to evaporate. By taping the jars up, it can't happen. A paper towel draped over the top works well.
Such a bummer the grenadine didn't work out but I think I know why. You can't form sugar (glucose) cyrstals when you have fructose added to it. The grenadine is probably made with high fructose corn syrup whitch wouldn't allow the sugar crystals to form. Watch the Good Eats video on sugar to see yourself:

The first 1 didn't work because u didnt take out any sugar crystals that were forming on the side and top of the jar!
( take it out with a spoon)
You were also meant to take the skewers out of the jar and put the mixture into another jar and clean the sugar crystals at the bottom!
Try it one more time!
